Yeah, I know you can buy the little packets in the supermarket, but screw that. When it comes to cooking, Ten likes to do things the hard way. And I swear it tastes better...I keep telling myself that. Recipe: 2½ Cups Powdered Milk 2 Cups Powdered Sugar 1 Cup Cocoa Powder (Dutch Process) 2 Tea Cornstarch 1 Tea Salt (Table or Pickling - you want a fine grain) Fill a mug 1/3 of the way with mix (about 1/4 of a cup of mix) and add just enough hot water to cover. Mix into a slurry to ensure all powder is incorporated, then add the remaining water to fill the mug. Why Dutch Process Cocoa Powder and what is it? There are 2 types of Cocoa Powder: Natural and Dutch Process. Natural is a bit more bitter, redder in color and used for baking. Dutch Process has had akalai added to reduce the bitterness, mellows the flavor and darkens the color. Want to know more?
