This recipe is for Marcii, one of the few gluten free recipes I have.
Granola Date Balls
Ingredients:
¾ Cup Dates – Chopped
½ Cup Raisins
½ Cup Water
2 Tbl Peanut Butter
1 Tea Vanilla Extract
2 Cups Granola
4 Oz Flaked coconut (1/2 Bag)
Directions:
Add the Water, Dates and Raisins to a small pot and bring to a boil, remove from heat and allow to stand for 10 minutes. Add to a blender or food processor along with the Peanut Butter and Vanilla, puree. Empty into a bowl and stir in the Granola, refrigerate for a few hours. Scoop into heaping tablespoons and roll in the Coconut.
Variation: Substitute Coconut for Ground Almonds.

Ingredients:
2 Cups Oatmeal
½ Cup Wheat Germ
2 Tbl Brown Sugar
¼ Tea Salt
1 Cup Extra Ingredients (See Chart Below)
¼ Cup Maple Syrup
3 Tbl Vegetable Oil
1 Tbl Water
Flavoring (See Chart Below)
Directions:
In a mixing bowl, combine the Oatmeal, Wheat Germ, Brown Sugar, Salt and any Extra Ingredients (Except Dried Fruit). In a small pot, combine the Maple Syrup, Vegetable Oil, Water and any Flavoring; bring to a simmer – pour over the dry mixture and stir. Spread onto a 13x9 baking pan and bake at 275* for 30 minutes. If using Dried Fruit, stir in and return to the oven for 15 minutes (if not, keep to cook time). Store for up to 2 weeks in an air-tight container.
