Occasionally I do health conscious things. I picked up this recipe a long time ago to make mayo at home and have it be healthy. This mimics the taste and texture close enough you won't miss the real thing.
Low-Fat Mayonnaise
Ingredients:
1½ Cup Plain Fat Free Yogurt 12 Oz Silken Tofu ¾ Tea Garlic Powder 3 Tbl Vinegar 1 Tea Worcestershire Sauce ½ Tea Hot Sauce 1 Tea Salt ½ Tea White Pepper
Directions:
Drain the Yogurt and Tofu for an hour with a colander lined with a coffee filter or Cheesecloth. Combine all ingredients in a bowl and mash until smooth.
Can be stored for up to 2 weeks in the refrigerator.
