Beef and Noodles 1 - 2 lb beef roast 3 - 4 c water 1 pkg au jus 2 bags of country or egg noodles sm can mushrooms (do not drain) sm can cream of mushroom soup Cook the hell out of the roast in a crock pot with the water and au jus. (I usually cook it on low all day) When it's done, pull it out and trim off excess fat. Start boiling noodles now, wile you're finishing up the meat. (And, I found it's easier to do after it's cooked. You waste less meat that way. After trimming fat off, shred beef into bite size pieces and return to crock pot. Add canned mushrooms and cream of mushroom soup. Mix well. When noodles are done, drain water really well and then add the noodles to the crock pot. Stir really well. Serve. I don't know how many servings there are but when I make this, we eat off this for DAYS. It tastes just as good heated up a couple of days old as it does freshly cooked.
