This isn't a fancy recipe on making pudding from scratch, but rather a diet shortcut. My mother went all hardcore dieting at one point and one of the recipes she found on forums was this. It's regular chocolate pudding that tastes and feels like the Mounds candy bar. The original recipe calls for sugar-free/fat-free pudding mix as well as skim milk, but you can use regular if you want. The trick to the recipe is the pudding gives a mushy consistency to the oatmeal, giving it the texture of coconut and the extract supplies the flavor. It's really simple to make and fairly health as far as desserts go and quite tasty.
Chocolate Coconut Pudding
Ingredients:
1 Cup Milk 1 package Instant Chocolate Fudge Pudding 1 Tea Coconut Extract 1 Cup Oatmeal
Directions:
Whisk together the Milk and Pudding Mix as per the package directions along with the Coconut Extract. Stir in the Oatmeal. Refrigerate for one hour.
