Waffles
Ingredients:
2 Cups Flour
2 Tbl Sugar
4 Tea Baking Powder
¼ Tea Salt
3 Eggs - Separated
1½ Cups Milk
½ Cup Vegetable Oil
1 Tea Vanilla
Directions:
Combine All Dry Ingredients in a medium bowl. In a separate bowl and using an electric mixer, beat the Egg Whites until they begin to form stiff peaks. In a third bowl, whisk in the Egg Yolks and Milk together and add to the dry ingredients, whisk until batter is smooth. Add in the Vegetable Oil and Vanilla. Lastly, fold in the Egg Whites. Pour in ¾ - 1 Cup of Batter into the waffle maker and cook for 5-8 minutes or according manufacturer’s directions.
Variations: (1) Add up to 1 pint of Blueberries to the batter (this will add to the cook time as the fresh fruit will make the batter soggy). (2) To make Whole Wheat Waffles, lower the Flour to ¼ Cup, add in 1 Cup Wheat Flour, ¼ Cup Wheat Germ and Oatmeal as well as ½ Cup of Flax Seed Meal. In addition, substitute the Vegetable Oil with Apple Sauce.
Sweet Potato Waffles
Ingredients:
2 Cups Flour
1 Tbl Baking Powder
1/2 Tea Salt
6 Egg Whites
1 Cup Milk
1/4 Cup Brown Sugar
1/4 Cup Butter - Melted
1 1/2 Cup Mashed Sweet Potatoes
1 Tbl Orange Zest
Directions:
Combine All Dry Ingredients in a medium bowl. In an electric bowl and using an electric mixer, beat the Egg Whites until they begin to form stiff peaks. In a third bowl, whisk together the Milk, Brown Sugar Butter, Sweet Potatoes and Orange Zest. Pour the wet ingredients into the dry and stir to combine. Fold in the Egg Whites. Pour in 1 Cup of Batter into the waffle maker. Cook for 5-8 minutes or according manufacturer’s directions.
